Ingredients
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 8 oz cream cheese, softened
– 4 cups chicken broth
– 1 cup milk
– 1 tsp dried basil
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
2. – Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. – Stir in the cream cheese until melted and well combined.
4. – Pour in the chicken broth and milk, then add the basil, oregano, salt, and pepper. Bring to a simmer.
5. – Add the lasagna noodle pieces and cook for 15-20 minutes, stirring occasionally, until the noodles are tender.
6. – Remove from heat and stir in the mozzarella cheese until melted.
7. – Serve hot and enjoy!
Notes
– For a thicker consistency, use less milk.
– Garnish with fresh basil, grated Parmesan, or crushed red pepper flakes.
