Ingredients
– 1 pound ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 head of cabbage, chopped
– 2 cans (15 oz each) tomato sauce
– 1 can (14.5 oz) diced tomatoes
– 2 cups beef broth
– 1 cup uncooked rice
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned, 5-7 minutes, making sure to crumble the beef as it cooks.
2. Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until fragrant.
3. Add the chopped cabbage, tomato sauce, diced tomatoes, beef broth, uncooked rice, oregano, and basil. Stir to combine.
4. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the cabbage is tender and the rice is cooked through.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with fresh parsley or grated Parmesan cheese, if desired.
Notes
This soup can be easily adapted to your taste. Try adding diced bell peppers, carrots, or mushrooms for extra vegetables. You can also substitute ground turkey or Italian sausage for the ground beef.
