Ingredients

– 2 cups all-purpose flour

– 1 cup ube powder

– 1/4 cup granulated sugar

– 2 eggs

– 1 1/2 cups milk

– 1/2 cup unsalted butter, melted

– 1 tablespoon baking powder


Instructions

1. In a large bowl, whisk together the all-purpose flour, ube powder, and granulated sugar.

2. In a separate bowl, lightly beat the eggs. Then, add the milk and melted butter, and whisk until well combined.

3. Pour the wet ingredients into the dry ingredients and stir just until the batter is smooth and free of lumps. Avoid over-mixing.

4. Preheat your waffle iron and lightly grease it. Pour the batter onto the hot waffle iron, using about 1/2 cup per waffle. Cook until golden-brown and crispy, about 4-5 minutes.

5. Serve the ube mochi waffles warm, with desired toppings such as ube syrup, fresh berries, or a scoop of vanilla ice cream.

Notes

For a chewier texture, you can substitute some of the all-purpose flour with mochiko (sweet rice flour). Additionally, you can add a teaspoon of ube extract to the batter for an even more pronounced ube flavor.
