Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 cup sour cream
– 1 teaspoon vanilla extract
– 1 cup semi-sweet chocolate chips
– 1 cup shelled, roasted, and salted pistachios, chopped
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
4. Add the eggs one at a time, beating well after each addition. Then stir in the sour cream and vanilla extract until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Fold in the chocolate chips and chopped pistachios.
6. Pour the batter into the prepared loaf pan and spread it evenly. Top with additional chopped pistachios, if desired.
7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
