Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1 (8 oz) package cream cheese, softened

– 1/2 cup powdered sugar

– 2 cups assorted fresh fruit (such as strawberries, kiwi, blueberries, and pineapple)

– 1/4 cup apricot preserves


Instructions

1. Preheat the oven to 350°F. Grease a 12-inch round pizza pan or baking sheet.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

5. Press the dough into the prepared pan, forming a slightly raised edge.

6. Bake for 15-18 minutes, or until the crust is lightly golden. Allow to cool completely.

7. In a medium bowl, beat the cream cheese and powdered sugar until smooth.
