Description

Ingredients

– 4 medium zucchini, halved lengthwise

– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

– 1/2 cup BBQ sauce

– 1/2 cup shredded cheddar cheese

– 2 tbsp olive oil

– 1 tsp garlic powder

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Preheat oven to 400°F. Scoop out the centers of the zucchini halves, leaving a 1/4-inch shell.

2. – In a large bowl, toss the chicken with the BBQ sauce, garlic powder, salt, and pepper until well coated.

3. – Arrange the zucchini boats on a baking sheet. Spoon the BBQ chicken mixture into the zucchini boats.

4. – Bake for 18-20 minutes, or until the chicken is cooked through.

5. – Top the zucchini boats with the shredded cheddar cheese and bake for an additional 2-3 minutes, or until the cheese is melted.

6. – Serve hot and enjoy!

Notes

For a spicier twist, try using a spicy BBQ sauce. You can also add sliced jalapeños or other toppings to the zucchini boats.
