Ingredients
– 3 pounds pork baby back ribs
– 1/2 cup honey
– 4 cloves garlic, minced
– 2 tablespoons soy sauce
– 1 tablespoon Dijon mustard
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cumin
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat your smoker to 225°F (107°C).
2. In a small bowl, mix together the honey, garlic, soy sauce, Dijon mustard, smoked paprika, cumin, salt, and black pepper to create the glaze.
3. Pat the ribs dry and season them generously with salt and pepper.
4. Place the ribs in the smoker and smoke for 2 to 2.5 hours, or until the ribs are tender and the internal temperature reaches 195°F (91°C).
5. Brush the ribs with the honey-garlic glaze during the last 30 minutes of smoking, reapplying the glaze a few times to create a sticky, caramelized coating.
6. Remove the ribs from the smoker and let them rest for 5-10 minutes before slicing and serving.
Notes
For a spicier kick, add a pinch of cayenne pepper to the glaze. These ribs also pair well with coleslaw, roasted potatoes, or a fresh green salad.
