Ingredients
– 8 chicken thighs, bone-in and skin-on
– 2 tablespoons smoked paprika
– 1 tablespoon brown sugar
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. Preheat your smoker to 275°F (135°C).
2. In a small bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper.
3. Pat the chicken thighs dry with paper towels and generously season them all over with the spice mixture.
4. Place the seasoned chicken thighs on the smoker grates, making sure they are not touching. Close the lid and smoke for 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C).
5. Remove the smoked chicken thighs from the smoker and let them rest for 5-10 minutes before serving.
Notes
– For extra crispy skin, you can broil the chicken thighs for 2-3 minutes after smoking.
– Try experimenting with different wood chips, such as hickory or apple, to customize the flavor profile.
– Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
