Ingredients

– 1 pound fresh green beans, trimmed and cut into 2-inch pieces

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 2 red chili peppers, thinly sliced (or 1/2 teaspoon red pepper flakes)

– 2 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 1 teaspoon sesame oil

– 1 tablespoon vegetable oil

– Salt and pepper to taste

Instructions

1. Heat the vegetable oil in a large wok or skillet over high heat.

2. Add the green beans and stir-fry for 4-5 minutes, until they start to blister and char.

3. Add the garlic, ginger, and chili peppers, and continue stir-frying for 1-2 minutes until fragrant.

4. Pour in the soy sauce, rice vinegar, and sesame oil, and toss everything together to coat the green beans evenly.

5. Continue stir-frying for another 2-3 minutes, until the beans are crisp-tender.

6. Season with salt and pepper to taste.

7. Serve the Sichuan dry fried green beans hot, as a side dish or appetizer.

Notes

– For a spicier version, use more chili peppers or a spicier variety.

– Try adding a teaspoon of sugar or honey to balance the heat and acidity.
