Description

This Shaved Rainbow Carrot Sesame Salad is a vibrant and refreshing side dish that’s bursting with flavor and crunch. Featuring shaved rainbow carrots tossed in a bright citrus dressing and sprinkled with toasted sesame seeds, it’s the perfect balance of sweet, savory, and tangy.

Ingredients

– 1 pound rainbow carrots, peeled and shaved into thin strips

– 2 tablespoons toasted sesame seeds

– 2 tablespoons fresh lemon juice

– 1 tablespoon rice vinegar

– 1 tablespoon honey

– 1 teaspoon sesame oil

– 1/4 cup olive oil

– Salt and pepper to taste

– 2 tablespoons chopped fresh cilantro or parsley (optional)

Instructions

1. In a large bowl, combine the shaved rainbow carrots and toasted sesame seeds.

2. In a small bowl, whisk together the lemon juice, rice vinegar, honey, and sesame oil. Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.

3. Pour the dressing over the carrot mixture and toss gently to coat evenly.

4. Season with salt and pepper to taste.

5. If desired, garnish with chopped fresh cilantro or parsley.

6. Serve immediately or chill until ready to serve.

Notes

This salad is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 3 days. The bright colors and crunchy texture make it a perfect side dish for grilled meats, roasted vegetables, or as a refreshing starter.
