Description

This Savory Spinach & Feta Spiral Pie is a delightful homemade masterpiece that combines flaky phyllo dough with a creamy spinach and feta filling. It’s perfect for a quick weeknight dinner or an impressive appetizer for special occasions.


Ingredients

– 8 sheets phyllo dough

– 2 tablespoons olive oil

– 1 onion, finely chopped

– 3 cloves garlic, minced

– 10 ounces fresh spinach, chopped

– 1 cup crumbled feta cheese

– 2 eggs, lightly beaten

– 1 teaspoon dried oregano

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon cayenne pepper

– Salt and black pepper to taste


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.

3. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

4. In a bowl, mix the sautéed spinach mixture, feta cheese, eggs, oregano, nutmeg, cayenne, salt, and black pepper until well combined.

5. Lay one sheet of phyllo dough on a clean work surface and brush it lightly with olive oil. Place another sheet of phyllo on top and brush with oil. Continue this process until you have 4 layers of phyllo.

6. Spread the spinach and feta filling evenly over the phyllo dough, leaving a 1-inch border on all sides.

7. Carefully roll the phyllo dough into a tight spiral, starting from one of the long sides. Tuck in the ends as you roll.

8. Place the spiral seam-side down on a baking sheet lined with parchment paper.

9. Bake for 25-30 minutes, or until the phyllo is golden brown and crispy.

10. Let cool for 5-10 minutes before slicing and serving.

Notes

For best results, use fresh, high-quality phyllo dough. You can also experiment with different fillings, such as roasted red peppers or sun-dried tomatoes, to customize the flavor.
