Description

Ritz Cracker Squash Casserole is a delicious and comforting side dish that’s perfect for busy weeknights or holiday gatherings. Tender squash is baked with a creamy, cheesy sauce and topped with a buttery Ritz cracker crust for a satisfying and flavorful side.


Ingredients

– 3 pounds yellow squash, sliced

– 1 cup sour cream

– 1 cup shredded cheddar cheese

– 1/2 cup melted butter

– 1 sleeve Ritz crackers, crushed

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F.

2. In a large bowl, mix together the sliced squash, sour cream, cheddar cheese, melted butter, salt, and black pepper until well combined.

3. Transfer the squash mixture to a greased 9×13 baking dish.

4. Sprinkle the crushed Ritz crackers evenly over the top of the squash.

5. Bake for 30-35 minutes, or until the squash is tender and the topping is golden brown.

6. Let the casserole cool for 5 minutes before serving.

Notes

For a variation, you can add diced onions or garlic to the squash mixture. You can also sprinkle the top with additional cheese before baking.
