Ingredients

– 1 cup long-grain rice

– 1 medium head green cabbage, shredded

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 tomatoes, diced

– 1/4 cup olive oil

– 1/2 teaspoon ground cinnamon

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.

2. Add the shredded cabbage to the pot and continue cooking for 5-7 minutes, stirring occasionally, until the cabbage starts to wilt.

3. Stir in the diced tomatoes, dried oregano, and cinnamon. Season with salt and black pepper to taste.

4. Add the long-grain rice and 2 cups of water. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.

5. Remove from heat and let the dish rest for 5 minutes. Fluff the rice with a fork and serve warm, garnished with chopped fresh parsley.
