Ingredients

– 1 lb corned beef, diced

– 1 cup sauerkraut, drained and squeezed dry

– 1 cup shredded Swiss cheese

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1 cup all-purpose flour

– 1 tsp caraway seeds

– Salt and pepper to taste

– 1 cup mayonnaise

– 1/4 cup ketchup

– 2 tbsp dill pickle relish

– 1 tbsp Dijon mustard

– 1 tbsp hot sauce (such as Sriracha)

– 1 tbsp lemon juice

– 1 tsp paprika


Instructions

1. 1. In a large bowl, combine the diced corned beef, sauerkraut, and Swiss cheese.

2. 2. In a separate bowl, mix the panko breadcrumbs, caraway seeds, salt, and pepper.

3. 3. Dredge the corned beef mixture in the flour, then dip in the beaten eggs, and finally coat with the seasoned breadcrumb mixture.

4. 4. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Carefully drop the breaded corned beef balls into the hot oil and fry for 2-3 minutes per side until golden brown.

5. 5. Drain the fried Reuben Balls on a paper towel-lined plate.

6. 6. In a small bowl, whisk together the mayonnaise, ketchup, pickle relish, Dijon mustard, hot sauce, lemon juice, and paprika to make the Spicy Thousand Island Dipping Sauce.

Notes
