Ingredients

– 1 cup (2 sticks) unsalted butter, softened

– 1 cup powdered sugar

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt

– 2 cups all-purpose flour

– 1 cup chopped roasted and salted pistachios


Instructions

1. 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. 2. In a large mixing bowl, beat the softened butter with a hand mixer until light and fluffy, about 2-3 minutes.

3. 3. Add the powdered sugar, vanilla extract, and salt, and continue mixing until well combined.

4. 4. Gradually add the all-purpose flour, mixing until a dough forms. Fold in the chopped pistachios.

5. 5. Scoop heaping tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheet.

6. 6. Bake for 12-15 minutes, or until the cookies are lightly golden on the edges.

7. 7. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

8. 8. Once cooled, dust the Pistachio Wedding Cookies with additional powdered sugar, if desired.
