Ingredients
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1/2 cup fresh orange juice
– 1 tablespoon orange zest
– 1 teaspoon ground cardamom
Instructions
1. Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan and set aside.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
4. Beat in the eggs one at a time, then stir in the orange juice, orange zest, and cardamom.
5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
6. Transfer the batter to the prepared loaf pan and use a spoon to create a shallow well down the center of the loaf.
7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
