Description

This Old-Fashioned Vegetable Beef Soup is a comforting and flavorful classic that’s perfect for a chilly day. Tender chunks of beef, fresh vegetables, and a rich broth come together in this satisfying and homemade soup.


Ingredients

– 1 pound beef stew meat, cut into 1-inch cubes

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 potatoes, peeled and diced

– 4 cups beef broth

– 2 cups water

– 2 bay leaves

– 1 teaspoon dried thyme

– 1 teaspoon dried parsley

– Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5 minutes total. Remove the beef from the pot and set aside.

2. Add the onion, carrots, and celery to the pot. Sauté for 5-7 minutes, until the vegetables start to soften.

3. Return the beef to the pot and add the beef broth, water, bay leaves, thyme, and parsley. Bring the mixture to a boil.

4. Reduce the heat to low, cover the pot, and simmer for 45 minutes, until the beef is very tender.

5. Add the diced potatoes and continue simmering for an additional 15 minutes, until the potatoes are tender.

6. Season with salt and pepper to taste.

7. Serve the Old-Fashioned Vegetable Beef Soup hot, garnished with additional parsley if desired.

Notes

For a thicker soup, you can make a roux by melting 2 tablespoons of butter in a separate pan, then whisking in 2 tablespoons of all-purpose flour. Stir this roux into the simmering soup to thicken it up.
