Ingredients
– 1 sheet frozen puff pastry, thawed
– 8 oz cremini mushrooms, sliced
– 2 shallots, thinly sliced
– 2 tbsp olive oil
– 1 tsp fresh thyme leaves
– 1 tsp fresh rosemary, chopped
– 4 oz herbed goat cheese
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Unfold the puff pastry sheet and cut into 6 squares.
2. – In a skillet, sauté the mushrooms and shallots in olive oil over medium heat until softened, about 5-7 minutes.
3. – Remove from heat and stir in the thyme, rosemary, and a pinch of salt and pepper.
4. – Place the puff pastry squares on a baking sheet. Spoon the mushroom-shallot mixture onto the center of each square, then top with a dollop of herbed goat cheese.
5. – Bake for 15-18 minutes, or until the pastry is golden brown and puffed up.
