Ingredients

– 4 ears of fresh corn, kernels removed

– 1/2 cup crumbled cotija cheese

– 2 tablespoons mayonnaise

– 1 tablespoon lime juice

– 1 teaspoon chili powder

– 1/4 teaspoon garlic powder

– Salt and black pepper to taste

– 2 tablespoons chopped fresh cilantro


Instructions

1. – Preheat your oven to 400°F (200°C).

2. – In a large bowl, combine the corn kernels, cotija cheese, mayonnaise, lime juice, chili powder, and garlic powder. Season with salt and black pepper to taste.

3. – Scoop the corn mixture into a greased mini muffin tin, filling each cup about 3/4 full.

4. – Bake for 12-15 minutes, or until the tops are lightly golden.

5. – Remove from the oven and garnish with chopped fresh cilantro.
