Ingredients
– 1 pound ground beef
– 1 cup breadcrumbs
– 2 eggs
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 teaspoon paprika
– 1/2 teaspoon ground coriander
– 1/2 teaspoon ground cumin
– 1/4 teaspoon crushed red pepper flakes
– 1 cup Greek yogurt
– 1/4 cup chopped fresh parsley
– 2 tablespoons olive oil
– Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, oregano, basil, paprika, coriander, cumin, and red pepper flakes. Mix well until all the ingredients are evenly distributed.
3. Transfer the meatloaf mixture to a greased 9×5-inch loaf pan and shape it into a compact loaf.
4. Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
5. While the meatloaf is baking, prepare the Garlic Herb Sauce. In a small bowl, mix together the Greek yogurt, chopped parsley, and olive oil. Season with salt and pepper to taste.
6. Once the meatloaf is cooked, let it rest for 5 minutes before slicing. Serve the Mediterranean Meatloaf warm, drizzled with the Garlic Herb Sauce.
