Ingredients

– 3 pounds Russet potatoes, peeled and cut into 1-inch cubes

– 1 cup whole milk

– 6 tablespoons unsalted butter, softened

– 1 cup sour cream

– 1/2 cup shredded cheddar cheese

– 6 slices bacon, cooked and crumbled

– 2 tablespoons chopped chives

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper


Instructions

1. In a large pot, cover the potato cubes with cold water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.

2. Drain the potatoes and return them to the pot. Add the milk and butter, then mash with a potato masher or hand mixer until smooth and creamy.

3. Stir in the sour cream, salt, and pepper until well combined.
