Ingredients
– 2 (15 oz) cans black beans, rinsed and drained
– 1 (15 oz) can kidney beans, rinsed and drained
– 1 cup diced cucumber
– 1 cup diced red bell pepper
– 1/2 cup chopped fresh cilantro
– 2 tablespoons olive oil
– 2 tablespoons lime juice
– 1 tablespoon apple cider vinegar
– 1 garlic clove, minced
– 1 teaspoon ground cumin
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the black beans, kidney beans, cucumber, bell pepper, and cilantro.
2. In a small bowl, whisk together the olive oil, lime juice, vinegar, garlic, cumin, salt, and pepper.
3. Pour the dressing over the bean mixture and stir gently to coat.
4. Cover and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to meld.
5. Serve chilled or at room temperature.
Notes
This salad can be made ahead of time and keeps well in the refrigerator for up to 5 days. Adjust the amount of cilantro, lime juice, or seasoning to your personal taste. For a spicy twist, add a diced jalapeño or a pinch of red pepper flakes.
