Description

Tender, caramelized parsnips tossed in a sweet maple glaze and fragrant thyme – the ultimate Thanksgiving or Christmas side dish! Pair with roasted meats, or enjoy as a delicious vegetarian main.


Ingredients

– 2 pounds parsnips, peeled and cut into 1-inch pieces

– 2 tablespoons olive oil

– 3 tablespoons pure maple syrup

– 1 tablespoon fresh thyme leaves, plus more for garnish

– 1 teaspoon kosher salt

– 1/4 teaspoon freshly ground black pepper


Instructions

1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.

2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme, salt, and pepper until well coated.

3. Spread the parsnips in a single layer on the prepared baking sheet.

4. Roast for 25-30 minutes, flipping halfway, until parsnips are tender and caramelized.

5. Transfer to a serving dish and garnish with additional fresh thyme leaves.

Notes

For extra crispy parsnips, roast at 425°F. You can also add a sprinkle of Parmesan cheese or chopped walnuts as a finishing touch.
