Description

Indulge in the perfect balance of savory, tangy, and crispy with these delectable Kimchi Scallion Waffles. Packed with the bold flavors of fermented kimchi and fresh scallions, these waffles make for a unique and satisfying breakfast or brunch dish.

Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1 teaspoon salt

– 2 eggs

– 1 1/2 cups milk

– 3 tablespoons unsalted butter, melted

– 1 cup chopped kimchi

– 1/2 cup thinly sliced scallions

Instructions

1. In a large bowl, whisk together the flour, baking powder, and salt.

2. In a separate bowl, beat the eggs, then stir in the milk and melted butter.

3. Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the chopped kimchi and sliced scallions.

4. Preheat a waffle iron and lightly grease it. Scoop the batter onto the hot waffle iron and cook for 4-5 minutes, or until golden brown and crispy.

5. Serve the Kimchi Scallion Waffles hot, with a drizzle of honey or your favorite toppings.

Notes

For extra crunch, you can add a bit of cornmeal to the batter. Leftover waffles can be frozen and reheated in the toaster for a quick breakfast.
