Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, melted
1 cup buttermilk
1 tablespoon caraway seeds (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners.
2. In a large bowl, whisk together the flour, baking soda, and salt.
3. In a separate bowl, combine the melted butter and buttermilk.
4. Pour the buttermilk mixture into the dry ingredients and stir just until combined, being careful not to overmix.
5. If using caraway seeds, fold them into the batter.
6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.
9. Serve warm, with a pat of butter if desired. Enjoy!
Notes
For a more traditional flavor, you can add 1 teaspoon of caraway seeds to the batter. These muffins are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
