Ingredients
– 1 cup cornmeal
– 1 cup all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, melted
– 1/4 cup honey, plus more for drizzling
– 2 large eggs
Instructions
1. Preheat your oven to 400°F (200°C). Grease a 24-cup mini muffin tin with nonstick cooking spray or butter.
2. In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt.
3. In a separate bowl, combine the melted butter, 1/4 cup of honey, and the eggs. Whisk until well combined.
4. Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
5. Scoop the batter into the prepared mini muffin cups, filling each cup about 3/4 full.
6. Bake for 12-15 minutes, or until the cornbread poppers are golden brown and a toothpick inserted in the center comes out clean.
7. Remove the poppers from the oven and let them cool for 5 minutes. Drizzle the remaining honey over the top of the warm poppers.
8. Serve the Honey Butter Cornbread Poppers warm, with extra honey for drizzling, if desired.
Notes
These cornbread poppers are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 3 days. To reheat, simply place them in a 350°F (175°C) oven for 5-7 minutes, or until warmed through.
