Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon salt
– 10 tablespoons cold unsalted butter, cubed
– 3-5 tablespoons ice water
– 3 large ripe bananas, mashed
– 1 cup granulated sugar
– 3 large eggs
– 2 cups whole milk
– 1/4 cup cornstarch
– 1 teaspoon vanilla extract
– 1 cup heavy cream
– 2 tablespoons powdered sugar
Instructions
1. Make the pie crust: In a food processor, combine the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add the ice water, 1 tablespoon at a time, and pulse until the dough just begins to hold together. Wrap the dough in plastic and refrigerate for at least 30 minutes.
2. Preheat the oven to 375°F. Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch pie plate. Crimp the edges and prick the bottom with a fork. Bake for 20-25 minutes, or until golden brown. Allow to cool completely.
3. Make the banana custard: In a medium saucepan, whisk together the mashed bananas, sugar, eggs, milk, and cornstarch. Cook over medium heat, stirring constantly, until thickened, about 8-10 minutes. Remove from heat and stir in the vanilla. Pour the custard into the cooled pie crust and refrigerate for at least 2 hours.
4. Make the whipped cream: In a large bowl, beat the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled banana custard.
