Description

Juicy, tender chicken skewers marinated in a bright lemon-herb mixture and perfectly grilled to golden-brown perfection. These Grilled Lemon-Herb Chicken Skewers are a summer favorite that can be enjoyed as a main dish or appetizer.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

– 2 tablespoons olive oil

– 2 tablespoons fresh lemon juice

– 1 tablespoon chopped fresh rosemary

– 1 tablespoon chopped fresh thyme

– 1 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large resealable bag or bowl, combine the chicken, olive oil, lemon juice, rosemary, thyme, garlic powder, salt, and pepper. Toss to coat the chicken evenly. Marinate for 30 minutes to 1 hour in the refrigerator.

2. Preheat grill to medium-high heat.

3. Thread the marinated chicken cubes onto metal or soaked wooden skewers.

4. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has grill marks.

5. Serve the Grilled Lemon-Herb Chicken Skewers warm, garnished with additional fresh herbs if desired.

Notes

For best results, marinate the chicken for at least 30 minutes to allow the flavors to develop. You can also broil the skewers in the oven for 8-10 minutes, turning halfway through.
