Grilled Apricot and Goat Cheese Crostini are a quick and easy appetizer that combines the sweet and savory flavors of juicy apricots, creamy goat cheese, and crisp, grilled bread. This delightful combination is perfect for entertaining or as a light snack.

Ingredients

– 1 baguette, sliced into 1/2-inch thick rounds

– 8 ounces goat cheese, softened

– 2 tablespoons honey

– 1 tablespoon chopped fresh thyme

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. Preheat grill to medium-high heat.

2. Grill the baguette slices for 1-2 minutes per side, or until lightly charred and crisp.

3. Spread a layer of goat cheese onto each grilled crostini.

4. Top the goat cheese with a half apricot, cut-side up.

5. Drizzle the apricots with honey and sprinkle with thyme, salt, and pepper.

6. Serve the Grilled Apricot and Goat Cheese Crostini immediately.

Notes

For best results, use ripe and juicy apricots. You can also try using different types of cheese, such as feta or brie, if desired.
