Ingredients
– 12 medjool dates, pitted
– 4 oz goat cheese, softened
– 6 slices bacon, cut in half crosswise
– 2 tbsp honey
– 1 tbsp fresh rosemary, chopped
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. Slice each date lengthwise and stuff with about 1 tsp of goat cheese.
3. Wrap each stuffed date with a half slice of bacon, securing with a toothpick.
4. Arrange the bacon-wrapped dates on the prepared baking sheet.
5. Bake for 15-18 minutes, or until the bacon is crispy.
6. In a small bowl, mix together the honey and chopped rosemary.
7. Drizzle the rosemary honey over the baked bacon-wrapped dates and serve immediately.
Notes
These Goat Cheese Stuffed Bacon Wrapped Dates can be made ahead of time and refrigerated until ready to bake. The rosemary honey can also be made in advance and stored in the refrigerator.
