Ingredients
– 1 pound boneless, skinless chicken breasts, cubed
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1 tablespoon freshly grated ginger
– 1 onion, diced
– 4 cups low-sodium chicken broth
– 2 cups water
– 8 ounces wide egg noodles
– 2 cups thinly sliced carrots
– 1 cup thinly sliced celery
– 2 tablespoons chopped fresh parsley
– 1 teaspoon dried thyme
– Salt and black pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the garlic, ginger, and onion. Sauté for 2-3 minutes, until fragrant and the onion is translucent.
3. Add the cubed chicken and cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned.
4. Pour in the chicken broth and water. Bring the mixture to a boil.
5. Add the egg noodles, carrots, and celery. Reduce heat and simmer for 10-12 minutes, until the noodles are tender.
6. Stir in the parsley and thyme. Season with salt and pepper to taste.
7. Serve the Ginger Garlic Chicken Noodle Soup hot, garnished with additional parsley if desired.
Notes
For a creamier texture, you can stir in 1/4 cup of heavy cream or coconut milk at the end. This soup also freezes well for up to 3 months.
