Description

Tender, juicy garlic herb chicken paired with perfectly roasted carrots – this easy, flavorful dish is a delicious and healthy weeknight meal the whole family will love.


Ingredients

– 1.5 pounds boneless, skinless chicken breasts

– 1 pound carrots, peeled and cut into 1-inch pieces

– 3 tablespoons olive oil

– 4 cloves garlic, minced

– 2 teaspoons dried thyme

– 1 teaspoon dried rosemary

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Preheat oven to 400°F.

2. In a large bowl, toss the chicken, carrots, 2 tablespoons olive oil, garlic, thyme, rosemary, salt, and pepper until well combined.

3. Spread the mixture out on a large baking sheet. Roast for 25-30 minutes, turning the carrots halfway, until the chicken is cooked through and the carrots are tender.

4. Drizzle the remaining 1 tablespoon olive oil over the dish before serving.

Notes

For an extra flavorful dish, try marinating the chicken in the garlic herb mixture for 30 minutes to an hour before roasting. This recipe also works great with bone-in, skin-on chicken thighs.
