Description

Indulge in a delightful patriotic dessert with this Fresh Berry Chantilly Flag Cake. This light and fluffy sponge cake is layered with a creamy chantilly filling and topped with vibrant fresh berries in a festive flag design, making it the perfect treat for summer celebrations and gatherings.


Ingredients

– 2 cups all-purpose flour

– 1 1/2 teaspoons baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 1/2 cups granulated sugar

– 4 large eggs

– 1 teaspoon vanilla extract

– 2 cups heavy cream

– 1/4 cup powdered sugar

– 2 cups fresh strawberries, hulled and sliced

– 1 cup fresh blueberries


Instructions

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the butter and sugar until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time, then stir in the vanilla.

4. Gradually fold in the dry ingredients until just combined, being careful not to overmix.

5. Divide the batter evenly between the prepared cake pans.

6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

7. In a large bowl, beat the heavy cream and powdered sugar until stiff peaks form.

8. Place one cake layer on a serving plate and spread half of the chantilly cream over the top. Arrange half of the sliced strawberries and blueberries in a flag pattern.

9. Top with the second cake layer and spread the remaining chantilly cream over the top. Arrange the remaining berries in a flag pattern.

10. Refrigerate the cake for at least 2 hours before serving.

Notes

This cake can be made a day in advance and stored in the refrigerator. The berries can be substituted with your favorite seasonal fruits. For a more decadent version, you can add a layer of lemon curd or raspberry jam between the cake layers.
