Description

Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

– 1 red bell pepper, sliced

– 1 green bell pepper, sliced

– 1 onion, sliced

– 2 cloves garlic, minced

– 1 tablespoon chili powder

– 1 teaspoon cumin

– 1 teaspoon paprika

– 1/2 teaspoon dried oregano

– 1/4 teaspoon cayenne pepper (optional, for extra heat)

– 1 cup shredded cheddar cheese

– 1 cup shredded Monterey Jack cheese

– Salt and black pepper to taste


Instructions

1. Preheat oven to 375°F (190°C).

2. In a large bowl, combine the cubed chicken, sliced bell peppers, sliced onion, and minced garlic.

3. Add the chili powder, cumin, paprika, dried oregano, and cayenne pepper (if using). Season with salt and black pepper to taste. Toss to coat the ingredients evenly.

4. Transfer the mixture to a 9×13-inch baking dish. Spread it out in an even layer.

5. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.

6. Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

7. Remove from the oven and let cool for 5 minutes before serving.

Notes

For added flavor, you can use a blend of Mexican or Tex-Mex spices. Serve with warm tortillas, rice, or a fresh salad for a complete meal.
