Ingredients
– 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
– 1 tablespoon coconut oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tablespoons grated fresh ginger
– 2 lemongrass stalks, bruised
– 1 teaspoon ground coriander
– 1 teaspoon ground cumin
– 1/2 teaspoon red pepper flakes
– 4 cups chicken broth
– 1 (13.5 oz) can coconut milk
– 2 tablespoons fish sauce
– 1 tablespoon lime juice
– 1/4 cup chopped fresh cilantro, plus more for garnish
– Salt and pepper to taste
Instructions
1. In a large skillet, heat the coconut oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Transfer the chicken to a slow cooker.
2. In the same skillet, sauté the onion until translucent, about 3-4 minutes. Add the garlic and ginger, and cook for 1 minute more, until fragrant.
3. Transfer the onion mixture to the slow cooker with the chicken. Add the lemongrass, coriander, cumin, and red pepper flakes. Pour in the chicken broth and coconut milk, and stir to combine.
4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
5. Remove the lemongrass stalks. Stir in the fish sauce, lime juice, and chopped cilantro. Season with salt and pepper to taste.

Notes
