Ingredients
– 1 pound boneless, skinless chicken breasts
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon chili powder
– 1/2 teaspoon cumin
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 24 wonton wrappers
– Vegetable oil for frying
– 1 cup shredded cabbage or slaw mix
– 1/2 cup diced tomatoes
– 2 tablespoons chopped cilantro
– 1/4 cup sour cream
– 2 tablespoons hot sauce (optional)
Instructions
1. Preheat oven to 375°F.
2. Season the chicken breasts with garlic powder, onion powder, chili powder, cumin, salt, and pepper.
3. Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes per side, until cooked through. Let the chicken cool, then shred or chop it into bite-sized pieces.
4. Lightly spray a baking sheet with cooking spray. Gently press the wonton wrappers into the cups of a mini muffin tin to create taco shells. Bake for 5-7 minutes, until lightly golden brown.
5. In a small bowl, mix the shredded chicken, cabbage, tomatoes, and cilantro.
6. Fill each baked wonton taco shell with the chicken mixture.
7. Top each taco with a dollop of sour cream and a drizzle of hot sauce (if using).
8. Serve immediately and enjoy!
Notes
For extra crispiness, you can also fry the wonton wrappers in vegetable oil for 2-3 minutes per side before filling them. Store any leftover taco shells in an airtight container for up to 3 days.
