Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup all-purpose flour
– 2 eggs, beaten
– 1 cup panko breadcrumbs
– 1 tsp paprika
– 1 tsp garlic powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 8 slices of bread
– 2 cups chopped romaine lettuce
– 1/2 cup Caesar dressing
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – Pound the chicken breasts to an even thickness, about 1/2 inch.
3. – Set up a breading station with the flour, beaten eggs, and panko breadcrumbs mixed with paprika, garlic powder, salt, and pepper.
4. – Dredge the chicken in the flour, then dip in the egg, and finally coat with the seasoned breadcrumbs.
5. – Place the breaded chicken on the prepared baking sheet and bake for 20-25 minutes, until the chicken is cooked through and the breading is crispy.
6. – Toast the bread slices.
7. – To assemble the sandwiches, place a crispy chicken breast on each of 4 slices of bread. Top with chopped romaine lettuce and a drizzle of Caesar dressing. Top with the remaining 4 slices of bread.
8. – Serve immediately and enjoy!
Notes
For extra crunch, you can pan-fry the breaded chicken instead of baking. Store any leftover chicken in the refrigerator for up to 3 days.
