Ingredients
– 1 lb Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 cup freshly grated parmesan cheese
– 1 cup ditalini pasta
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up as it cooks, until browned, about 5-7 minutes.
2. – Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. – Pour in the chicken broth and stir in the heavy cream, parmesan, ditalini, and thyme. Season with salt and pepper.
4. – Bring the soup to a simmer and cook for 12-15 minutes, until the pasta is tender.
