Description

This Creamy Garlic Butter Salmon with Spinach & Mushrooms is an easy, restaurant-quality dish that’s perfect for busy weeknights. Tender salmon fillets are pan-seared and then smothered in a rich, creamy garlic butter sauce, mixed with tender spinach and sautéed mushrooms.


Ingredients

– 1 lb salmon fillets

– 2 tbsp olive oil

– 4 cloves garlic, minced

– 8 oz cremini mushrooms, sliced

– 4 cups fresh spinach

– 1/2 cup heavy cream

– 4 tbsp unsalted butter

– 1 tsp dried parsley

– 1/4 tsp crushed red pepper flakes (optional)

– Salt and pepper to taste


Instructions

1. – Pat the salmon fillets dry and season both sides with salt and pepper.

2. – Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 3-4 minutes per side, until opaque and cooked through. Remove the salmon from the skillet and set aside.

3. – In the same skillet, add the minced garlic and sliced mushrooms. Sauté for 2-3 minutes until the mushrooms start to soften.

4. – Add the heavy cream, butter, parsley, and red pepper flakes (if using) to the skillet. Whisk to combine and let the sauce simmer for 1-2 minutes until thickened slightly.

5. – Add the fresh spinach to the skillet and cook for 1-2 minutes, stirring frequently, until the spinach is wilted.

6. – Return the cooked salmon fillets to the skillet and spoon the creamy garlic butter sauce over the top.

7. – Serve immediately, garnished with extra parsley if desired. Enjoy!

Notes

– For a creamier sauce, use half-and-half or whole milk instead of heavy cream.

– Adjust the amount of red pepper flakes to your desired level of spiciness.

– Leftover salmon can be stored in an airtight container in the refrigerator for up to 3 days.
