Ingredients
– 1 pound fresh asparagus, trimmed and chopped
– 2 cups fresh or frozen green peas
– 1 medium onion, diced
– 3 cloves garlic, minced
– 4 cups vegetable broth
– 1 cup heavy cream
– 2 tablespoons butter
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. In a large saucepan, melt the butter over medium heat.
2. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent.
3. Add the chopped asparagus and green peas. Sauté for an additional 5 minutes.
4. Pour in the vegetable broth and bring the mixture to a simmer. Reduce heat and let the soup simmer for 10-12 minutes, or until the asparagus is tender.
5. Remove the soup from heat and use an immersion blender to blend the soup until smooth and creamy.
6. Stir in the heavy cream and season with salt and pepper to taste.
