Description

Cranberry Orange Chicken is a quick and easy weeknight dinner that’s bursting with bold, sweet, and tangy flavors. Tender chicken is simmered in a delightful sauce made with fresh cranberries, orange juice, and a hint of garlic for a comforting and family-friendly meal.

Ingredients

– 1 pound chicken breasts, cut into 1-inch pieces

– 1 cup fresh cranberries

– 1/2 cup orange juice

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/4 cup brown sugar

– 2 tablespoons Dijon mustard

– Salt and pepper to taste

Instructions

1. In a large skillet, heat 1 tablespoon of oil over medium-high heat.

2. Add the chicken pieces and cook for 5-7 minutes, or until lightly browned on all sides.

3. Add the cranberries, orange juice, garlic, thyme, brown sugar, and Dijon mustard to the skillet. Stir to combine.

4. Reduce heat to medium-low and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

5. Season with salt and pepper to taste.

6. Serve the Cranberry Orange Chicken over a bed of rice or pasta, garnished with fresh thyme if desired.

Notes

– For a deeper flavor, you can use chicken thighs instead of breasts.

– Swap out the fresh cranberries for dried cranberries if desired.

– Serve with a side of steamed veggies for a complete and balanced meal.
