Ingredients
– 2 cups all-purpose flour
– 2 tablespoons white sugar
– 2 teaspoons baking powder
– 1 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 2 large eggs
– 1 1/2 cups milk
– 4 tablespoons unsalted butter, melted
– 1 cup milk chocolate chips
– 1/2 cup heavy cream
– 2 tablespoons unsweetened cocoa powder
– 1 teaspoon ground cinnamon
Instructions
1. In a large bowl, whisk together the flour, sugar, baking powder, 1 teaspoon cinnamon, and salt.
2. In a separate bowl, beat the eggs. Then stir in the milk and melted butter until well combined.
3. Pour the wet ingredients into the dry ingredients and whisk until just combined (do not overmix).
4. Preheat a waffle iron and lightly grease it. Scoop the batter onto the hot waffle iron and cook until golden brown and crispy, about 5 minutes.
5. In a small saucepan, combine the chocolate chips, heavy cream, 2 tablespoons cocoa powder, and 1 teaspoon cinnamon. Heat over medium, stirring frequently, until the chocolate is melted and the sauce is smooth.
6. Serve the churro waffles hot, drizzled with the Mexican chocolate sauce. Enjoy!
Notes
For extra crispiness, you can lightly coat the cooked waffles in cinnamon-sugar before serving. The chocolate sauce can also be made in advance and reheated before serving.
