Description

This Chicken Zucchini Stir Fry is a delicious and easy weeknight dinner that’s ready in just 30 minutes. Tender chicken and fresh zucchini are sautéed in a savory, flavorful sauce for a quick, healthy meal the whole family will love.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

– 2 medium zucchini, sliced into 1/2-inch rounds

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 2 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 1 tablespoon honey

– 1 teaspoon sesame oil

– 1/4 cup low-sodium chicken broth

– 2 tablespoons cornstarch

– 2 tablespoons vegetable oil

– Salt and freshly ground black pepper, to taste

– Chopped green onions, for garnish (optional)


Instructions

1. In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, and chicken broth. Set aside.

2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and cook for 3-4 minutes, until lightly browned on all sides.

3. Add the zucchini, garlic, and ginger to the skillet. Cook for 2-3 minutes, stirring frequently, until the zucchini is crisp-tender.

4. Pour the soy sauce mixture into the skillet and bring to a simmer. In a small bowl, whisk together the cornstarch and 2 tablespoons of water. Slowly pour the cornstarch mixture into the skillet, stirring constantly, until the sauce has thickened, about 1-2 minutes.

5. Season with salt and pepper to taste. Serve immediately, garnished with chopped green onions if desired. Enjoy!

Notes
