Description
This Cheesy Twice Baked Potato Casserole is the ultimate comfort food side dish. Tender baked potatoes are mashed with sour cream, cheddar cheese, bacon, and scallions, then baked to golden, bubbly perfection.
Ingredients
– 6 medium russet potatoes, baked
– 1 cup sour cream
– 1 1/2 cups shredded cheddar cheese
– 6 slices bacon, cooked and crumbled
– 3 scallions, sliced
– 1/4 cup milk
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F. Grease a 9×13 baking dish.
2. Bake the potatoes until tender, about 1 hour. Allow to cool slightly.
3. Cut the potatoes in half lengthwise and scoop the flesh into a large bowl, reserving the skins.
4. Add the sour cream, 1 cup of the cheddar cheese, half the bacon, half the scallions, milk, salt, and pepper. Mash and stir until well combined.
5. Spoon the potato mixture back into the potato skins and arrange in the prepared baking dish.
6. Top with the remaining 1/2 cup cheddar cheese and the remaining bacon.
7. Bake for 20-25 minutes, until the cheese is melted and bubbly.
8. Garnish with the remaining scallions before serving.
Notes
For extra flavor, try adding a clove of minced garlic to the potato mixture. You can also experiment with different cheese varieties like Monterey Jack or Pepper Jack. Leftovers can be refrigerated for up to 4 days.
