Ingredients
– 2 cups mixed diced vegetables (such as bell peppers, zucchini, and onions)
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1 tablespoon olive oil
– 1 teaspoon dried Italian seasoning
– 1/2 teaspoon garlic powder
– Salt and black pepper to taste
– 1 sheet of puff pastry, thawed
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, combine the diced vegetables, mozzarella cheese, Parmesan cheese, olive oil, Italian seasoning, garlic powder, salt, and black pepper. Mix well until everything is evenly distributed.
3. Unfold the puff pastry sheet and roll it out on a lightly floured surface to slightly enlarge it.
4. Spread the vegetable mixture evenly over the puff pastry, leaving a 1-inch border on all sides.
5. Carefully roll up the puff pastry, starting from the long side, to create a tight log.
6. Slice the log into 8-10 equal pieces and arrange them on a baking sheet lined with parchment paper.
7. Bake for 20-25 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
