Description

This Cheesy Baja Chicken & Bell Pepper Skillet is a delicious, quick and easy one-pan meal that’s perfect for busy weeknights. Tender chicken, melted cheese, and colorful bell peppers come together in a flavor-packed skillet for a satisfying dinner the whole family will love.


Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 tbsp olive oil

– 1 medium onion, diced

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 2 cloves garlic, minced

– 1 tsp chili powder

– 1 tsp cumin

– 1/2 tsp paprika

– 1/4 tsp cayenne pepper (optional)

– Salt and black pepper to taste

– 1 cup shredded Monterey Jack cheese


Instructions

1. – Heat the olive oil in a large skillet over medium-high heat.

2. – Add the cubed chicken and cook for 5-7 minutes, stirring occasionally, until chicken is cooked through.

3. – Add the onion, bell peppers, and garlic. Cook for 3-4 minutes, stirring frequently, until vegetables are tender.

4. – Stir in the chili powder, cumin, paprika, cayenne (if using), salt, and pepper.

5. – Sprinkle the shredded cheese over the top and cover the skillet. Cook for 2-3 minutes until the cheese is melted.

6. – Remove from heat and serve immediately.

Notes

For extra flavor, you can add a splash of lime juice or chopped cilantro at the end. This recipe also works well with diced tomatoes or sliced avocado on top.
