Ingredients

– 1 (3-4 lb) whole chicken

– 1 (12 oz) can of beer

– 2 tbsp olive oil

– 2 tsp garlic powder

– 2 tsp smoked paprika

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. Preheat your oven to 400°F (200°C).

2. Rinse the chicken and pat it dry with paper towels.

3. Open the can of beer and carefully insert it into the cavity of the chicken.

4. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper.

5. Rub the seasoning mixture all over the outside of the chicken, making sure to get it into all the nooks and crannies.

6. Place the chicken, with the beer can still inside, on a baking sheet or in a roasting pan.

7. Roast the chicken in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

8. Remove the chicken from the oven and let it rest for 10 minutes before carefully removing the beer can.

9. Carve the chicken and serve hot, garnished with fresh herbs if desired.

Notes

– For extra crispy skin, you can baste the chicken with the juices in the pan during the last 10 minutes of cooking.
