Ingredients
– 1 cup low-fat cottage cheese
– 4 large eggs
– 2 tablespoons chopped fresh chives
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a medium-sized bowl, combine the cottage cheese, eggs, chives, salt, and pepper. Stir until well mixed.
3. Grease a 6-cup muffin tin or individual ramekins. Evenly distribute the cottage cheese mixture into the prepared cups.
4. Bake for 20-25 minutes, or until the eggs are set and the tops are lightly golden.
5. Serve hot, garnished with additional chives if desired.
