Description

Baghali Ghatogh is a delightful Persian dish that combines tender fava beans and perfectly cooked eggs for a protein-packed and satisfying meal. This easy-to-prepare recipe is a healthy and flavorful option for a quick weeknight dinner or a special brunch.


Ingredients

– 1 pound fresh fava beans, shelled

– 6 large eggs

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 teaspoon ground turmeric

– 1 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– Salt and black pepper to taste

– Chopped fresh parsley and dill for garnish


Instructions

1. Bring a medium pot of salted water to a boil. Add the shelled fava beans and cook for 5-7 minutes, until tender. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent.

3. Stir in the minced garlic, turmeric, cumin, and coriander. Cook for 1 minute, until fragrant.

4. Add the cooked fava beans to the skillet and gently mix to combine. Create 6 small wells in the bean mixture and crack the eggs into them.

5. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.

6. Season with salt and black pepper to taste. Garnish with chopped fresh parsley and dill.

7. Serve immediately, either directly from the skillet or transferred to a serving plate.

Notes

For a creamier texture, you can mash some of the beans before adding them to the skillet. This dish can also be made with frozen or canned fava beans if fresh are not available.
