Ingredients

– 8 cups mixed greens (such as spinach, kale, and arugula)

– 1 cup roasted butternut squash cubes

– 1/2 cup dried cranberries

– 1/4 cup toasted pecans

– 2 tablespoons crumbled feta cheese (optional)

– 1/4 cup apple cider vinegar

– 2 tablespoons extra-virgin olive oil

– 1 tablespoon honey

– 1 teaspoon Dijon mustard

– Salt and pepper to taste


Instructions

1. 1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with a drizzle of olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender and lightly caramelized.

2. 2. In a large salad bowl, combine the mixed greens, roasted butternut squash, dried cranberries, and toasted pecans.

3. 3. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, and Dijon mustard. Season with salt and pepper to taste.
